Enough cooked rice to feed your family
1 can of kidney beans, drained and rinsed
500g Mexican mixed vege (Chuckwagon Corn etc) or use fresh veges of your choice diced.
1 packet of taco seasoning
In a wok, heat the vegetables and kidney beans. Add the rice and the taco seasoning. Stir to coat the rice with the seasoning. Heat until the vegetables are cooked.
Serve with wraps or as is.
To make it even tastier, I'm going to add a dollop of sour cream, salsa and diced avocado pear on top when next I make it.
Stud1 added extra jalapenos to add more heat and I mixed a dollop of sour cream into Monkey's to cool it down.
