Taco Soup and Cheese Scrolls!

This morning was a misty Wintery morning and I wasn't feeling too inspired for breakfast let alone dinner. But thanks to my trusty slowcooker I knew I could easily whip up a nourishing meal with a few cans of this and a few shakes of that.

So here is my recipe for Taco Soup - easy and yummy. Monkey decided that we have to have it every week as he loves it "so much, it's exactly what I like to eat, Mummy!" 

Seriously though - I could eat this every day. The fresh out of the oven scrolls push it over the top!! We also ate it so quickly I forgot to take photos but I found some that looked a lot like what I made.

Taco Soup:

Cans:
Credit
2 (big) Tomatoes - crushed, chopped, whole, whatever you have in the pantry
2  Kidney beans - drain/don't drain up to you - I don't
1 Corn kernels - see above :D
1 water and 1 stock cube
Sachets and shakes:
Taco seasoning
pepper
chilli - if you want it hot!

Pour into the slow cooker - Monkey does it for me usually. Stir well and leave on low until dinner time.

When you're ready to serve it and you have them, sprinkle chopped coriander on top, add a dollop of sour cream and a sprinkle of grated cheese. 

Serve with Cheesey Scrolls.

Cheesey Scrolls

1 batch of bread dough 
1 cup of cheese

Roll out the bread dough and sprinkle with the cheese. 
Roll up like a swiss roll and slice into thick slices.
Sprinkle with a little more cheese.
Bake until golden brown.

Serve hot with the Taco Soup!
